Last May 28, I was invited to be part of Mommy Bloggers PH and Maya Kitchen Baking Workshop. The baker in me just got excited because for sure I will learn another delicious recipe together with my son Q. So without further ado, below is the recipe of one of the cupcakes we learned from the workshop. Click HERE to read about our experience during the fun workshop.
Strawberry and Cream Cupcake
CUPCAKES
1 1/4 cups MAYA All-Purpose Flour
1/2 teaspoon baking soda
1/4 cup butter
1/4 cup sugar
1 egg
1/4 cup milk
1/2 cup strawberry jam
1 1/2 tablespoons lemmon juice
STRAWBERRY WHIPPED CREAM FROSTING
1/3 cup strawberry jam
1 cup whipping cream
strawberry jam, as needed for filling
CUPCAKES
Preheat oven to 350 F/ 177 C. Line a 3 oz. 12-hole muffin pan with cupcake liners. Set aside.
In a bowl, combine flour and baking soda. Set aside.
In another bowl, cream butter and sugar until fluffy. Add egg and beat well. Add the dry ingredients and milk. Blend well. Stir in Strawberry jam and lemon juice and mix until well combined. Pour batter into prepared pan, up to 2/3 full. Bake for 20 minutes or until done. Allow to cool.
WHIPPED CREAM
Stir strawberry jam to soften. In a mixer bowl, beat whipping cream until stiff. Fold in strawberry jam.
DECORATING
Make a small hole at the center of the cupcakes and fill with jam. Pipe or spread Strawberry whipped cream on top.
It's been so long since Q and I had a time just the two of us. When I saw this opportunity posted by Mommy Bloggers Philippines, I thought it was just PERFECT! This will be his last hurrah for summer before going back to school.

Quillan and I were so excited to attend the baking workshop prepared by Mommy Bloggers Philippines and Maya Kitchen. In fact, we left the house very early because we are just commuting with a shuttle service (UV Express Marikina-Ortigas-Ayala).
We arrived at the MKCAC exactly an hour before the call time. We were the earliest birds. So we got plenty of time to take photos of ourselves around the classroom. Q described the kitchen as AS SEEN ON TV. According to him, it looks like the ones we saw in Cooking shows we used to marathon watch like Master Chef Australia and Hell's Kitchen. He was so overwhelmed. He even asked me how much would it cost to build a beautiful kitchen like that because it looks good in our house. He checked on the drawers, the utensils,and even the CCTV camera right infront of the class that will project the teacher's procedure of cooking on the television screen.

While waiting, we checked on the 2 sheets of paper with the recipe of that day's baking. The Strawberry and Cream Cupcake and the Peanut Butter and Chocolate Chip Cupcake. I asked him to read on it so he could ask me early what he doesn't understand. This workshop was a great opportunity because they got a chance to be hands on with the baking procedure. Well, baking is something familiar to Q because I often do it at home for their meryenda and special occasions. But he usually does not involve himself. He would just nose on what I am doing then leave, commends the good smell it emmits around the house and just eat when I'm finished.

MBP mommy participants arrived one by one with their kids. 12 pairs of mom and child. We were divided to 4 groups. And because our kids are not of the same age levels, Mommies get to be involved too to guide especially the 5 year olds. We belonged to Group 3 with Nanay Nadia of Nanay's Trip with son Rio and Mommy Louisa of artofbeingamom.com with son Jael.

Before baking, Chef Icy/IC, reminded us and the kids the important things they observe at the Center.
Washing of hands - proper hygiene is highly neccesary especially that we are dealing with food to avoid contamination that causes sickness.
CLAYGO (Clean As You Go) - it is very important to observe cleanliness of workplace to avoid untoward incidents such as accidents. This also helps in making the job easier and organized.
Mise en Place - is a French culinary term which means "putting in place" or "everything in place". It refers to the set up required before cooking. It also refers to organizing and arranging the ingredients to be used by cooks/chefs.
Chef Icy, ran through the ingredients that were readily measured and available on each tables. We dealt with the Strawberry and Cream cupcake first.
We will not use the ovens in our tables, instead the chefs preheated some oven at the 'backstage'. She instructed us to bake along with her by watching her through the TV screen and we do what she does.

On our table, the kids alternately took turns with the putting in the ingredients to the bowl. We let Rio and Jael put the ingredients and make Quillan mix them. The 2 younger boys had chances of mixing the batter too. Then us mommies will do the final mixing and cleaning of the sides of the bowl to make sure the ingredients are well mixed before we put into the muffin trays. They also alternated with the scooping of the batter to the cupcake liners they prepared before we started. We yielded 11 cupcakes for this recipe.

While waiting for the Strawberry and Cream cupcake to bake. Chef Icy showed us how to make the Strawberry Whipped Cream Frosting. She did a big batch of frosting for everyone then we proceeded with the Peanut Butter and Chocolate Chip Cupcake.

Same as the first, the kids took alternate turns. But this time, the batter is a bit hard to fold so I came to the rescue. They scooped the batter to the cupcake liners again and we came up with 18 cupcakes for this recipe. Good enough for our take aways, as promised by our teacher Chef and for eating after the session.
Then Teacher Chef had the kids lined up to experience putting the chocolate and sugar to the butter being beaten in the electric mixer. Oh how these kids enjoyed that part despite the clouds of confectionaire sugar they created!

While waiting for the PB & CC cupcakes, the Strawberry cupcakes are ready for piping. Chef Icy made the kids line up with piping bags on their hands ready. Gave each kids a couple of dollops of Strawberry Whipped Cream Frosting and went back to their respective cooled cupcakes. In our group, Rio, Jael and Quillan had 3 Strawberry Cupcakes each to decorate. Teacher Chef also gave us a couple of tablespoons of heart-shaped sprinkles. She instructed to cut 1/4 inch from the tip of the piping bag to release the frosting. We followed how she frosted her cupcakes. She just released the frosting from one point creating a small mountain of frosting. Then she placed a teaspoon in the middle and created a well. Put some sprinkles in the well and around the frosting.

Peanut Butter and Chocolate Chip Cupcake
We proceeded right away, to frosting the PB&CC. The kids lined up again with their piping bags and got their shares of the Chocolate Frosting. The cupcakes didn't have enough time to cool down and we also were running out of time. So we frosted them warm. We watched first Chef Icy do her cupcakes and followed her spiral design. As expected, the frosting melted or "umiyak" in baker's term, before we get to take a photo of them. Good thing the effects of the melted frosting still looked nice complete with the white vermicelli sprinkles, which according to Q looked like Watta Tops.
We were so happy to see all the kids seem to enjoy the workshop. Most of them right after decorating their cupcakes took their individual spots sipping the left overs in the piping bags. I cant blame them for the frostings did really taste delish! While the kids were eating and spending the sugar rush by running around the classroom, the mommies were busy packing the finished products in the boxes provided.
